Set a plate of these crispy parmesan potato wedges in front of me and I’m perfectly content to call it lunch. These are great with ketchup, or any of our Burger Sauces, Jalapeno Ranch, or creamy Avocado Ranch.

The Secret to Crispy Potato Wedges

Have you ever given your potatoes an ice bath? Potatoes have a fair amount of starch in them which can give them a gummy texture. Soaking the potato wedges draws out the starch, making the finished product extra crispy. When you drain the water, you can visually see the potato starch that collected at the bottom of the bowl.

Another thing to help them come out crispy is making sure the wedges are laid out in an even, single layer (not overlapping) on your baking sheet.

Pro Tip: Avoid soaking your potatoes in warm water because heat activates the starch, which makes it harder to separate from the potatoes.

Ingredients

These potato wedges require simple ingredients and the perfect seasoning blend to make the potato wedges really shine:

  • Potatoes – use 4 medium russet potatoes or about 1 1/2 to 2 lbs of potatoes.
  • Salt – fine sea salt coats potatoes nicely but kosher salt would work also
  • Black pepper – freshly ground and you can add more to taste
  • Garlic powder – the best way to add garlic flavor when roasting at high temperatures so it won’t burn
  • Paprika – adds color and a hint of sweetness and nice color to the potatoes
  • Extra virgin olive oil – helps the potatoes crisp up and turn golden brown. Also important to hydrate the spices.
  • Toppings – we love adding chopped parsley and finely grated parmesan cheese over the finished wedges.

The Best Potatoes for Wedges

We love the size, shape, and texture of Russet Potatoes best. Another great thing about Russets is how inexpensive they are! Some other potatoes that you can use instead of Russets are Red or Yukon Gold.

If you use Red Potatoes, you can probably skip the ice bath. They are considered waxy potatoes and not starchy so an ice bath won’t draw out much starch. The Yukon Gold could still use that soak though. They are an equal mix of starchy and waxy, so it’ll still help to draw out some starch to help with the crispiness of the potatoes.

How to Make Potato Wedges

  1. How to cut potato wedges: cut potatoes in half lengthwise then slice each half into 4-5 slices depending on the potato size. Wedges should be about 1/2″ thick. If they are cut too thick, they won’t crisp up properly.
  2. Soak potatoes: Place potatoes in a bowl of cold water with about 2 cups of ice cubes. Let them stand for 30 min then pat dry thoroughly with paper towels or a tea towel.
  3. Season: Sprinkle salt, pepper, paprika, and garlic powder over potatoes and toss to combine. Drizzle with olive oil and toss to coat.
  4. Bake: Place potato wedges on a parchment or foil-lined, rimmed baking sheet, keeping them in a single layer and cut-side down. Bake at 450˚F for 20 minutes then flip and bake another 12-15 minutes until crispy and golden brown.

To Make Parmesan Topping

While the potatoes are roasting in the oven, prep your toppings. As soon as the potatoes are done roasting, transfer to a mixing bowl, sprinkle with parmesan cheese, and parsley, and toss to combine then serve right away.

How to Keep Potato Wedges from Sticking?

Line your Baking sheet with parchment paper or aluminum foil and allow the potato wedges to roast for the first 20 minutes without stirring. Once they have crisped up, they should flip easily.

Can I make these in the air fryer?

Yes! Follow our Air Fryer French Fries instructions to make air fryer potato wedges. You will need to cook half a batch at a time and add a little more time since they are thicker than fries so keep an eye on them.

Can I skip the ice water bath?

If you’re really short on time you can skip this step, but they might not be a little softer than you were hoping for (see “The secret to crispy potato wedges” above).

  1. Preheat the oven to 450˚F. Line a rimmed baking sheet with foil or parchment paper. Cut potatoes into wedges by cutting lengthwise in half then slice each half into 4-5 wedges, (1/2“- thick). Place potatoes in a bowl of cold water with about 2 cups of ice cubes.   4. If using the topping, transfer the hot potato wedges to a mixing bowl, sprinkle with parmesan and parsley, and toss to combine. Serve right away with your favorite dipping sauce.

Spicy Guacamole is the ultimate party appetizer and it always disappears fast. We’ve dialed in the correct ratios of avocados to onions and lime juice to give this authentic flavor.

Our Classic Guacamole was delicious; we probably made it a hundred times! We’ve changed it up a little and spiced it up a lot! This spicy guacamole lights a small fire in your mouth forcing you to eat it slowly and savor each bite. Plus, you can adjust the spiciness depending on which pepper you add.

My husband is the adventurous eater in our family and he’s always inspiring me to improve recipes and make a great recipe even more amazing. Thanks to his adventurous pallet, we now make this Spicy Guacamole even more often than the classic and we even have a Corn Guacamole if you love a sweet and smoky twist to your guac.

Ingredients for Spicy Guacamole

These are all the ingredients for a classic guac plus extras to make it spicier (i.e. peppers, garlic and cumin):

  • Avocados – we use large ripe avocados (not too squishy and not too firm)
  • Tomato – use a medium tomato or 2 smaller roma tomatoes and don’t use tomatoes that are over ripe and juicy.
  • Onion – white onion has the best flavor for guacamole but you can use yellow onion or red onion if that is what you have on hand and it will taste great. Watch our tutorial on how to chop an onion.
  • Cilantro – you’ll need about 1/2 cup chopped cilantro which is about 1/3 to 1/2 of a bunch
  • Peppers – use serrano peppers for a spicier guacamole or jalapeno peppers for a milder version and add them to taste. Be sure to seed the peppers before adding.
  • Garlic – adds an extra layer of spice and flavor
  • Lime juice – freshly squeezed is best from 1 1/2 to 2 limes
  • Salt and pepper – add these to taste
  • Cumin – adding ground cumin adds a subtle smoky layer of flavor

How To Make Spicy Guacamole

1. Cut avocados in half, remove the seeds and scrape them out into a flat bottomed bowl (a flat bottom will make it easier to mash). Smash with a potato masher or a fork (leave some chunks; don’t puree it). Squeeze the lime juice directly over the avocados.

Pro Tip: The fresh lime juice is the best way to preserve the color and freshness. Be sure to use freshly squeezed lime juice and avoid using concentrate lime juice which can have additives and never tastes quite right.

2. Chop onion and add it to the bowl.

3. Remove seeds from jalapeños (or serranos for spicier guacamole). Chop jalapeños finely. We double chop them through our Vidalia Chop Wizard which makes chopping a cinch!

4. Cut the tomato in half parallel with the top and remove seeds (either by scraping them out with a small spoon or by squeezing them out). Dice your tomatoes. Add chopped tomatoes to your bowl. We often just leave the seeds in (that’s ok too).

5. Press garlic than finely chop your cilantro and add it to the bowl.

6. Add 1/2 tsp dry cumin powder, 1/4 tsp freshly ground black pepper, 1/2 tsp kosher salt (regular salt is ok too), and stir just until combined.

If you’re really bored, serve guacamole in the avocado shells. Hopefully, you didn’t have to fish them out of the garbage can. I’m not admitting to anything.

Make-Ahead

Guacamole is best enjoyed the day it is made for the best vibrant color and flavor, but you can store it up to 24 hours in the refrigerator. It does lose some of it’s spiciness as it stands and the flavors meld.

  • Refrigerated – If you have leftover guacamole, or want to make it ahead, place plastic wrap directly over the surface of the guacamole. Contact with air is what causes avocado to brown so you want to keep the air out.
  • Can I freeze gaucamole? – guacamole does not freeze well and neither do tomaotes. They will end up watery and mealy so we do not recommend freezing.

Pro Tip: To speed up ripening your avocados, place them in a bag and keep them at room temperature. An avocado is ripe when it gives a little with a gentle pressure. It should feel slightly soft but not squishy.

If you’ve tried Beef Birria, you just know! It’s next-level amazing Mexican food with rich, complex flavored broth with tender shredded beef. You can eat it as a stew, or use the meat and broth to make Birria Tacos, quesadillas or burritos.

I might embarrass myself with how excited I get to share certain recipes, but it’s usually because so many hours of testing and love went into creating them, and I’m just so dang proud of the end result! This easy Beef Birria recipe (birria de res) is no exception! It’s just as good as I’ve had at restaurants and food trucks in Arizona and California.

Why I love this recipe:

  • Flavorful – the stew is loaded with fresh ingredients, seasonings, and three different chile peppers, resulting in a rich and flavorful consomé broth.
  • Versatile – Serve it as a stew, or use it to make Birria Tacos!
  • Freezer Friendly – Take advantage of the time and effort that it took to make, and be sure to freeze the leftovers for a meal, or tacos, another night.

How to make Beef Birria:

Prepare Meat: Remove any large pieces of fat from the chuck roast. Cut it into a few large pieces and season with salt.

Prepare Dried Chiles: Rinse the chiles (wear gloves if desired), then use scissors to remove the stem and make a slit along the side to open them and remove the seeds.

Make Chile Sauce: Add tomatoes and onion to a large stock pot (at least 5.5qt pot of bigger) over medium heat. Add whole garlic cloves, chile peppers, and all of the spices except the bay leaf. Cook for 5 minutes, then add vinegar and water. Bring to a low boil, reduce heat to simmer and cook for 15 minutes, uncovered.

Blend Sauce: Add mixture to a blender and blend as smooth as possible. Pour mixture through a fine mesh strainer, back into the pot. Add water to the blender and swirl it around to clean excess sauce from the blender, then add it to the pot.

Add Meat and Simmer: Add 1 tablespoon kosher salt. Bring to a boil. Add short ribs, chuck roast and 3 bay leaves. Cover, reduce heat to a simmer and cook for 2 ½ hours.

Remove meat and shred: Check meat to make sure it’s tender. Remove meat to a plate and chop or shred into pieces. Discard bones and bay leaves.

Serve: Taste broth (careful, it’s hot!) and add additional seasonings or salt, if needed. Add some meat to bowls and pour broth on top. Garnish with fresh chopped white onion and cilantro, and a squeeze of fresh lime juice.

Birria vs Barbacoa:

Barbacoa originates from Central Mexico and is traditionally cooked in the ground in a hole for many hours. Birria originates from Jalisco, Mexico and is a saucier version that is submerged in a sauce for the cooking duration. This recipe is a shorter version that still yields a delicious result that is more accessible for an at home cook.

Make Ahead and Freezing Instructions:

To Make Ahead: This is a great recipe to make ahead and reheat another day. I like to make birria beef at least a day in advance and use the leftovers to make tacos or quesabirria.

To Freeze: The cooked beef and sauce can be frozen in a freezer safe container for up to 3 months. Thaw overnight in the fridge.

Recipe Variations:

  • Meat: Although many people use beef, typical birria is made with goat or lamb meat, which you could substitute in this recipe. Always use some bone-in meat, as bones add rich flavor to the broth.
  • Chile Peppers and Spice Level: The Guajillo and Passilla peppers are mild. Guajillo chiles are necessary for this recipe, but if you can’t find passila, try substituting mulato chiles, or use 1-2 extra guajillo chiles and leave out the pasilla chiles. The arbol chiles are the hottest. For medium spice, remove the seeds. For very mild heat level, omit the arbol chiles.
  • Cinnamon Stick: Mexican cinnamon sticks are softer than cassia cinnamon sticks common in the US, so be sure to use a small piece of Mexican cinnamon sticks for this recipe, so they blend well. Otherwise substitute ground cinnamon.
  • Slow Cooker: Prepare recipe up to step 5. Add broth and meat to slow cooker and cook on LOW for 6 hours, until meat is tender.
  • Instant Pot: I think it’s better, faster and easier to make Beef Birria on the stove, but here’s an Instant Pot Beef Birria recipe if you’re interested.

Here’s how to make Sheet Pan Pizza – an easy, fast, cheap way to make homemade pizza that the whole family will love! Everyone can add whatever toppings they want. Sheet pan pizza is the best way to make a large homemade pizza (also great for meal prep!) with very little mess or fuss – no pizza stone, no pizza paddle, just an easy homemade pizza recipe! And you only need four main ingredients and 25 minutes!

I love a good homemade pizza, but honestly, fussing with a hot pizza stone is such a pain. Trying to slide an assembled pizza onto the hot stone often ends up with me being super frustrated at things sticking or toppings falling off, all while my head is half inside a super hot oven. Not fun when your family is hangry and you just want an easy dinner!

Enter: sheet pan pizza. The crust may not be as thin and crispy as a rolled out pizza cooked on a stone. However, it is SO EASY, there is very little mess, and you can make one HUGE pizza with everyone’s favorite toppings on it. This is definitely my favorite way to make homemade pizza for these reasons!

And guess what? You CAN achieve a crispy crust with a sheet pan. The trick? Bake it on the bottom rack! This ensures the bottom of the pizza is getting enough heat to fully cook and get pretty crispy without burning the toppings or the cheese. Ta-da!

You only need four main ingredients for this (plus any additional toppings), and about 25 minutes to whip it up. Be sure to check out the video in the recipe card below!

Sheet Pan Recommendation

I can’t recommend Nordicware Half Baker’s Sheets enough. It’s the only baking sheet you’ll ever need. Cookies, bbq chicken, roasted veggies, pizza, you name it can be cooked on it! First of all, they are CHEAP, running only about $10-12 each. They are sturdy, so they don’t buckle with extreme temperature changes. You can use metal utensils on them without worrying about damaging the surface, which means you can be a little rough when doing things like flipping roasted veggies. And things don’t really stick too much, since they are so thick and distribute heat well. It’s perfect for this sheet pan pizza!

Ingredients needed

For this sheet pan pizza recipe, you’ll need four main ingredients:

  • Prepared Pizza Dough – For the over-achievers, I recommend a homemade honey whole wheat pizza dough, but any store-bought version is fine.
  • Prepared Pizza Sauce – if I’m being honest, I usually just use marinara sauce, since I often have some left over from other recipes. You can use any pizza sauce you want – here’s a great homemade pizza sauce recipe that only takes 10 minutes to whip up!
  • Olive oil or cooking spray – to grease the pan
  • Shredded Mozzarella Cheese – or a dairy-free/vegan substitute, if applicable. You can also do sliced fresh mozzarella if you’re feeling fancy.
  • Other toppings of choice – see below for suggestions.

How to make Homemade Sheet Pan Pizza

  1. First, make sure your dough is at room temperature (tips on that below). Preheat your oven and lightly grease a sheet pan.
  2. Stretch the dough out on the sheet pan to cover the whole thing, pressing down around the edges to form a ridge for the crust.
  3. Spread pizza sauce on the dough and sprinkle with shredded cheese.
  4. Add toppings
  5. Bake on the bottom rack. Allow to cool for at least 5 minutes before slicing for best results.

Topping Suggestions:

  • Pepperoni and Black Olive
  • Pineapple, Red Onion, and Ham
  • Sausage and Mushroom
  • Sliced Tomatoes and Fresh Basil (see tips below)

Tips and Tricks

  • Be sure your pizza dough is at room temperature and not cold from the fridge. You can place your dough on the greased sheet pan on top of the oven while it preheats to speed things along. Take refrigerated dough out of the fridge 1-2 hours before cooking, or frozen dough out on the counter 3-4 hours before cooking. If it’s hard to spread the dough out, let it rest for 10 minutes or so and come back to it and it should be easier.
  • If topping with fresh basil or fresh arugula, or something similar, add those toppings after cooking the pizza. Their flavor is better fresh and gets kind of lost and they dry out if you cook it on the pizza.

Ingredients

  • olive oil or cooking spray for greasing pan
  • 1 prepared pizza dough store-bought or homemade (see notes)
  • 1 cup pizza sauce or marinara sauce (see notes)
  • 8 oz. shredded mozzarella cheese
  • additional toppings of choice pepperoni, mushrooms, olives, more cheese, etc.

Instructions

  • Arrange a rack on the bottom half of the oven and preheat to 425 degrees F. Lightly grease a rimmed baking sheet/half sheet pan with olive oil or cooking spray. Allow your pizza dough to come to room temperature if it’s cold from the fridge (it’s easier to stretch out when it’s warm – see notes).

  • Spread your pizza dough out onto the sheet pan by stretching it gently to fit the pan. Press it down onto the sheet pan so it’s quite thin on the center, forming a ridge around the perimeter.

  • Spread the pizza sauce evenly on the pizza, avoiding the ridge on the perimeter of the crust. Top with the shredded mozzarella and any other toppings you want (see notes).

  • Bake on the bottom rack of the oven for 15-20 minutes, or until cheese is fully melted and starting to brown.

  • Allow to cool for at least 5 minutes before cutting into 8 slices and serving.

Notes

  • Here is my homemade pizza dough recipe, with honey, olive oil, and part whole wheat flour.
  • For pizza sauce, I often just use store-bought marinara sauce rather than pizza sauce, since I often have some left over in my fridge from making pasta. I also love using homemade pizza sauce – here is my homemade pizza sauce recipe that only takes 10 minutes to whip up.
  • You can place the dough on top of the oven on the greased sheet pan while it preheats to help warm it up, and/or take it out of the fridge and let it come to room temperature 1-2 hours before cooking or freezer and 3-4 hours before cooking.
  • If forming the dough seems difficult to do without tearing, let the crust rest for 10 minutes or so and come back to it – it will be easier to handle when it’s warmer and has rested a little bit. If the dough is sticky, you can coat your hands in a little olive oil to help.
  • I like to make four different sections of the pizza, so each person in my family can get the toppings they like. If you are adding delicate leafy herbs or greens (like fresh basil or arugula), add those to the top of the pizza after it’s done baking.

This is quite possibly the best throw-together chickpea salad you’ll ever make. It’s loaded with roasted chickpeas, roasted red peppers, crisp cucumbers, pickled onions, lots of herbs (of course), and tossed in my homemade balsamic vinaigrette.

Unlike my garden-fresh Mediterranean chickpea salad, this version has a combination of smoky, tangy, and roasted goodness. Let me emphasize “roasted,” because the roasted chickpeas and roasted red peppers are what really makes this one heck of a salad recipe with amazing depth of flavor!

Funny enough though – this chickpea salad recipe came about from my budget meal prep (I was literally just tossing things together one day). So yes, this salad is not just super tasty and easy to make, but it’s an economical one to boot! That’s the beauty of most chickpea recipes anyways.

Roasted Chickpea Salad Ingredients

The best salads are a result of mish-mashing pantry staples with fresh fridge ingredients. There’s a few items you’ll need to make ahead of time, such as the pickled onions and roasted chickpeas. But once those are made, you can continue to enjoy this chickpea salad a few times over the week!

  • Roasted Chickpeas: I’m using roasted chickpeas for this salad to give a toasty, spiced flavor. Trust me, it’ll taste a lot better than chickpeas straight from the can.
  • Cucumbers: There’s nothing like freshly diced cucumbers in a salad – am I right?
  • Roasted Red Peppers: You can roast red peppers on your own, but I’m using the jarred version to keep the process easy.
  • Pickled Onion: Honestly, both fresh or pickled red onions would work great in this salad. But the pickled version adds a deliciously sweet tang!
  • Herbs: Mix in freshly chopped parsley, or any of your favorite herbs for that matter!
  • Balsamic Vinaigrette: I love the way this balsamic vinaigrette tastes in this salad. But you can use a lemon vinaigrette as well.
  • Cheese: As always, cheese is optional. But crumbled goat cheese (or feta cheese) definitely amps up the flavor.

The Best Hash Brown Recipe

My sister Tanya is the person that made me love homemade hash browns. They were the best I’ve tried and her secret? Plenty of butter. It adds incredible flavor and crisps up the outside forming a crust that crackles lightly when you bite into it. I took it a step further and added bacon grease (yes, save that bacon grease the next time you make Bacon in the oven). Wow, it makes wonderful hashbrowns – better than any restaurant version.

Ingredients for Hash Browns

  • Russet Potatoes – these are the classic choice for hash browns because they crisp up nicely
  • Onion powder – adds onion flavor without any burnt onion taste
  • Oil or Bacon grease – using bacon fat from baked bacon adds even more flavor to hash browns.
  • Butter – infuses the potatoes with rich flavor, improves browning and crisping
  • Salt and pepper – simple seasonings are all you need for potatoes

How many potatoes should I use?

The key for perfectly cooked hashbrowns is to keep the hashbrowns to about 1/3 to 1/2-inch thickness in the pan, otherwise, they won’t crisp up and cook through properly. Here are the guidelines we follow:

  • 10-inch skillet: use 1.25 lb potatoes
  • 12-inch skillet: use 1.5 lbs of potatoes
  • Griddle: use 2 lbs+ or enough potatoes to keep the potatoes about 1/3-inch thickness when the potatoes are spread out over the surface. 

Pro Tip: To cook hashbrowns, use a coated non-stick pan or a seasoned cast iron so the potatoes don’t stick to the pan. 

How to Make Hashbrowns

  1. Prep potatoes – peel and grate potatoes on the large holes of a box grater (use safety gloves to protect your hands). Transfer potatoes to a bowl lined with cheesecloth. Wrap the potatoes tightly in cheesecloth and squeeze to get out as much juice as possible. Sprinkle potatoes with onion powder and stir to combine.
  2. Preheat skillet – place a large non-stick or cast-iron skillet over medium heat. Once the skillet is hot, add oil and butter.
  3. Add potatoes – spread the potatoes in an even layer in the skillet, about 1/3″ thick. Sautee undisturbed for 6 minutes or until the bottom is golden brown and crisped.
  4. Season – sprinkle the top of the potatoes with salt and pepper to taste.
  5. Flip hash browns – cut the hashbrowns in half or in quarters using a pizza cutter to make it easier to turn them over. Flip then season the second side with salt and pepper.
  6. Drizzle more oil or bacon fat around the edges and dot the corners with butter which will melt under the hashbrowns. Sautee another 6 minutes and serve until golden brown.

How to squeeze water out of potatoes

Removing the excess water is critical to getting the crispiest hash browns. Here are some methods to try. The cheesecloth method is the quickest and easiest.

  • By Hand: Squeeze fistfuls of potatoes over a colander to get as much liquid out as possible then transfer to a paper towel-lined bowl and pat dry with paper towels. 
  • Cheesecloth: Place potatoes into a cheesecloth and squeeze out or wring out as much water as you can. 
  • Tea Towel: follow the same method to wring out liquid as a cheesecloth. Keep in mind potatoes can stain a towel so use one you don’t mind messing up.
  • Potato ricer: This is my least favorite and I think it’s easier by hand, but you can squeeze out the water in portions using a potato ricer.

Common Questions

Should I stir hash browns?

You want to give the potatoes a chance to sizzle and crisp up before you flip the potatoes. Just keep an eye on them to ensure your heat isn’t too high and avoid burning potatoes. Otherwise, it isn’t necessary to stir the potatoes, just flip them halfway through cooking.

Can I add onions?

I have tested this with fresh chopped onion and the onion tends to scorch on the skillet and there’s a hint of burnt flavor. Adding onion powder provides enough onion flavor without the burning issue. You can add fresh chives as garnish afterward if you want even more onion flavor.

What are the best potatoes for hash browns?

Russet potatoes are the most common potatoes for hashbrowns. They crisp up better than waxy potatoes. That being said, you can still make delicious hashbrowns with Yukon gold potatoes if that is what you have on hand.

  1. Peel and grate potatoes and transfer to a bowl lined with cheesecloth. Use the cheesecloth to wring out as much liquid from the potatoes as you can (or squeeze out water with fistfuls and pat dry with paper towels). Sprinkle potatoes with onion powder and stir to combine.

  2. Heat a large 10-inch cast-iron skillet or nonstick skillet over medium heat and once it’s hot (but not smoking), add 1 Tbsp oil or bacon fat and swirl in 1 Tbsp butter.

  3. Add potatoes and spread in a single layer about 1/3” thick. Let potatoes sauté undisturbed for 6 minutes over medium heat or until the bottom is browned and crisped up (If it darkens too quickly, reduce the heat).

  4. Sprinkle the top with salt and pepper to taste.

  5. Flip the hash browns. Sprinkle again with salt and pepper on the second side. If the hash browns don’t flip easily as a single disk, use a pizza cutter to cut in half or quarters then flip individual pieces.

  6. Drizzle 1 Tbsp oil or bacon fat around the edges and dot the edges with butter. It will melt under the hash browns. Sauté without stirring for another 6 minutes or until the potatoes are golden brown and crisp on the second side. Remove from heat and serve garnished with chives.

  • 10-inch skillet = 1.25 lb potatoes
  • Griddle = use enough potatoes to keep the potatoes about 1/3 thickness
